Super Simple Apple Spice Cake with Cream Cheese Frosting

Not only is this a quick-and-easy recipe, it’s versatile. Make cupcakes, layer cakes or a sheet cake!

Ingredients

  • RubyFrost Apples, peeled, cored and diced - 2
  • finely chopped walnuts - 1/3 cup
  • spice cake mix - 1 box
  • cinnamon - 1 tsp
  • -
  • cream cheese, at room temperature - 8 oz
  • unsalted butter, softened - 1/2 cup
  • confectioners’ sugar, sifted - 2 cups
  • vanilla extract - 1 tsp

Instructions

  1. Preheat oven to 350 degrees.
  2. Follow cake mix instructions to make batter.
  3. After beating gently fold in additional cinnamon, nuts and RubyFrost apples.
  4. Spoon into lined cupcake tins or well-greased and floured 9-inch cake pans or 9x13 sheet pan.
  5. Bake according to manufacturer’s instructions. Allow cake(s) to cool before frosting.
  6. While cake is cooling, Place the cream cheese and butter in a large bowl. Be sure your cream cheese is at room temperature to avoid lumps!
  7. Using an electric mixer on medium speed, beat until combined and smooth.
  8. Gradually add the confectioners’ sugar, mixing until smooth.
  9. Add the vanilla and beat well until nice and fluffy.
  10. Spread icing on cakes!
