RubyFrost Applesauce Blondies
Ingredients
- For RubyFrost applesauce -
- RubyFrost apples - 2
- Sprinkle of cinnamon -
- Honey - 1 tbs
- Water - 1 tbs
- For Blondies -
- RubyFrost applesauce - 1/2 cup
- Melted coconut oil (or butter) - 1/4 cup
- Brown sugar - 1 cup
- Large egg - 1
- Vanilla extract - 1 tsp
- AP pastry flour - 1 cup
- Pinch of salt -
- For Cinnamon Sugar Topping -
- Stevia - 5 tsp
- Cinnamon - 1 tsp
Instructions
- To make the applesauce:
- Add all ingredients to a pot. Simmer together for 10-15 minutes
- Place in a blender and blend until smooth
- To make the blondies:
- Set oven to 350 degrees Fahrenheit and line an 8x8 pan with parchment paper
- Add the applesauce, coconut oil and brown sugar to a medium mixing bowl and stir to combine
- Stir in the egg and vanilla
- Stir in the flour and salt until well combined
- Spread into the prepared pan
- Combine the cinnamon and sugar, and sprinkle over the top of the applesauce blondie batter
- Bake for 20 - 25 minutes until the center is no longer jiggling and a toothpick comes out mostly clean
- Allow to cool completely before cutting so that the bars keep their shape
- Top with coconut whipped cream or ice cream and extra chopped apples and ENJOY
- Store in the fridge for a week
