RubyFrost Applesauce Blondies

Ingredients

  • For RubyFrost applesauce -
  • RubyFrost apples - 2
  • Sprinkle of cinnamon -
  • Honey - 1 tbs
  • Water - 1 tbs
  • For Blondies -
  • RubyFrost applesauce - 1/2 cup
  • Melted coconut oil (or butter) - 1/4 cup
  • Brown sugar - 1 cup
  • Large egg - 1
  • Vanilla extract - 1 tsp
  • AP pastry flour - 1 cup
  • Pinch of salt -
  • For Cinnamon Sugar Topping -
  • Stevia - 5 tsp
  • Cinnamon - 1 tsp

Instructions

  1. To make the applesauce:
  2. Add all ingredients to a pot. Simmer together for 10-15 minutes
  3. Place in a blender and blend until smooth
  4. To make the blondies:
  5. Set oven to 350 degrees Fahrenheit and line an 8x8 pan with parchment paper
  6. Add the applesauce, coconut oil and brown sugar to a medium mixing bowl and stir to combine
  7. Stir in the egg and vanilla
  8. Stir in the flour and salt until well combined
  9. Spread into the prepared pan
  10. Combine the cinnamon and sugar, and sprinkle over the top of the applesauce blondie batter
  11. Bake for 20 - 25 minutes until the center is no longer jiggling and a toothpick comes out mostly clean
  12. Allow to cool completely before cutting so that the bars keep their shape
  13. Top with coconut whipped cream or ice cream and extra chopped apples and ENJOY
  14. Store in the fridge for a week
