RubyFrost apples, peeled, cored and cut into ¼ inch slices - 4
eggs - 2
white sugar - 2/3 cup
vegetable oil - 2/3 cup
matzah meal - 1 cup
potato starch - 1/4 cup 1 tbsp
cinnamon - 2 tsp
brown sugar - 1/4 cup 1 tbsp
For the topping: -
walnuts coarsely chopped - 1/2 cup
brown sugar - 1/2 cup
cinnamon - 1 tbsp
Instructions
Preheat the oven to 350 degrees and grease a 9-inch round cake pan
Peel, core and slice apples. Toss apples with brown sugar and 1 tsp cinnamon
In a separate bowl, beat eggs with an electric mixer for a few minutes until light and fluffy
Slowly add sugar (do not dump in all at once) and oli while beating the batter with an electric mixer. Fold in matzah meal, potato starch and 1 tsp cinnamon until batter is smooth
Pour half of the batter into the cake pan. Gently lay apple slices and pour remaining batter over them. The batter will be somewhat thick, so you may need to scoop it and spread it out over the apples. Arrange a second layer of remaining slices on top
Mix the topping by combining chopped walnuts, brown sugar and cinnamon in a bowl. Sprinkle over the top of the cake.
Bake at 350 degrees for 60 minutes or until a toothpick comes out clean. The topping will brown quickly. You may want to cover the baking pan with aluminum foil for the last 15 minutes of baking if the top is golden brown but the interior still needs more time
