RubyFrost Apple Cottage Cheese Sweet Potato Toast

Ingredients
- Large Sweet Potato, sliced lengthwise into 1/4 inch slices - 1
- Cooking Spray -
- Kosher Salt - 1/2 tsp
- Turkey Bacon - 6 pieces
- Cottage Cheese - 16 oz
- Everything Bagel Seasoning - 1 tsp
- RubyFrost Apples, sliced thin - 1-2
Instructions
- Preheat the oven to 350 degrees F and line a large sheet pan with parchment. Place the sweet potato sliced in a single layer onto the sheet pan. Spray with cooking spray and sprinkle with salt.
- Bake for 15-20 minutes until the potatoes have soften but aren’t fully cooked through (you want them the be *almost* fully cooked). Remove from the oven and cool completely (this step can be done ahead of time and stored in an air-tight container in the refrigerator then reheated in your toaster).
- When you’re ready to make your toast, start by frying the turkey bacon in a large pan to brown- a few minutes per side. Cool on a paper towel lined plate and cut each piece into thirds.
- While the turkey bacon cooks, place slices of cooled sweet potatoes into the toaster to reheat and finish cooking.
- Place the sweet potato toast onto your plate and spread an even layer of cottage cheese on the top.
- Sprinkle everything bagel seasoning over the cottage cheese to your taste.
- Add the 3 pieces of turkey bacon to the top of the seasoned cottage cheese and then top with a layer of thinly sliced RubyFrost apples. Serve immediately.
