Hasselback Pork Tenderloin With RubyFrost Apples

Ingredients

  • Cooking Spray -
  • Kosher Salt - 1/2 tsp
  • Black Pepper - 1/4 tsp
  • Garlic Powder - 1/4 tsp
  • Onion Powder - 1/4 tsp
  • Dried Thyme - 1/4 tsp
  • Sweet Paprika - 1/4 tsp
  • Olive Oil - 1 Tbsp
  • Pork Tenderloin - 1
  • RubyFrost Apple, sliced into 1/3 inch slices - 1

Instructions

  1. Preheat the oven to 400 degrees F and grease a baking pan with cooking spray. In a small bowl, mix salt, pepper, garlic powder, onion powder, thyme, and paprika until well combined. Set aside.
  2. Use a very sharp knife to cut slits halfway down into the meat, being careful not to cut all the way through. Make the slits ½ inch apart going all the way down the top of the tenderloin.
  3. Rub olive oil all over the pork tenderloin, and then rub the spice mixture all over it. Place the tenderloin into the prepared pan.
  4. Gently press each apple slice into each slit with the skin of the apple facing up. 5. Roast uncovered until the thickest part of the tenderloin reaches 140 degrees F, around 30 minutes depending on thickness.

  6. Remove the meat to a cutting board and rest for 5 minutes, tented with foil. Slice and serve immediately.
